Spicy Fried Rice

Ingredients (2 portions)

  • 1 cup cooked rice (cold)
  • Spanish Chorizo sausage
  • 1 hand full of mushrooms (e.g. champignons)
  • 2 cloves garlic
  • 1 shallot (small)
  • 2 eggs
  • 1 red chili or chili flakes
  • 1 spring onion
  • 1/2 tsp Maggi seasoning
  • 2 big carrots
  • fresh basil

Procedure

  1. Chop the shallot, garlic, mushrooms, spring onion. Cut the Chorizo into small cubes of about 1 cm.
  2. Cut the carrots into large strips then steam for 12 minutes.
  3. Heat the wok, then add the oil.
  4. Add the mushrooms, then stir fry until brown, then add the Chorizo and stir fry for about 1 min.
  5. Add the onion, garlic, chili and toss it, then add the eggs and stir fry until cooked.
  6. Add the cooked rice and stir fry until the rice is hot.
  7. Season with salt, pepper and Maggi, then add the spring onion.
  8. Serve with steamed carrots and garnish with fresh basil

Tips

  • The Chorizo will give the rice a beautiful color.
  • Don’t overcook the Chorizo, it burns easily.
  • You don’t need to add too much salt and chili, the Chorizo already has plenty of that.
  • You can substitute the Maggi seasoning with soy sauce.
  • If you don’t have Champignons, just use your favorite kind of mushrooms.
  • Basmati rice is really good for fried rice because it doesn’t stick together.
