Spaghetti Carbonara

Ingredients (for 2 persons)

  • 200 g spaghetti
  • 1 whole egg
  • 1 egg yolk
  • 50 grams parmigiano reggiano, freshly grated
  • 75 g of Guanciale
  • olive oil
  • 1 clove garlic
  • salt
  • pepper

Procedure

  1. Cut the guanciale into small pieces.
  2. Boil the spaghetti as per instructions on the packaging.
  3. In a frying pan add a talbespoon of olive oil, then add garlic until olden brown and remove it from the pan, then add guanciale fry it until crispy or golden brown. Set aside (don’t throw the oil).
  4. In a bowl, combine the 2 whole eggs, 1 egg yolk, Parmigiano and whisk it until well combined, then add salt and pepper, then get some pasta water (just a little bit) and mix it.
  5. When the pasta is done. Add the pasta into the guanciale and mix it properly, then add the sauce mixture, then salt and pepper, then toss it properly.
  6. Place the carbonara pasta on a plate, then crack some black pepper, sprinkled with some freshly grated parmesan cheese.

Tips

  • You can substitute the guanciale with bacon.
  • The Guanciale is salty, so be careful not to over-salt your pasta water and your carbonara sauce.
  • Serve with your favorite salad.
