Roti Burrito
Ingredients (for 2 persons)
Marinated Shrimps
- 15 shrimps (medium size)
- salt
- pepper
- paprika powder
- garlic powder
- onion powder
Shrimp Batter
- 1/2 cup flour
- 2 tablespoons corn starch
- salt
- pepper
- paprika powder
- 2 eggs
- 1 tsp of water
Cabbage Salad
- 1 cup cabbage (shredded)
- 1/4 cup sour cream or yogurt
- 2 cloves garlic
- 1 stalk of spring onion
- 1/8 cup of cilantro
- 1/8 cup water
- juice of 1/2 lemon
Burrito
- 1 avocado
- 5 pcs Roti bread
- chili flakes
- salt and pepper
- tomatoes
- tabasco
Procedure
- Wash and clean your shrimp and remove the skin, then pat dry.
- Onto a bowl add all the marinade ingredients and mix it until well combined and set aside for 15 minutes.
- While your shrimp is being set aside, prepare your cabbage salad. Shred your cabbage, then add the remaining ingredients, then toss it properly, then set aside.
- For the burrito, smash your avocado, then season with a pinch of salt, pepper and chili flakes, then set aside.
- Mix all the ingredients of your batter mixture, then add the shrimp.
- Heat your pan with oil, then fry the shrimps until brown, at the same time fry the Roti bread.
- When everything’s done, place the cabbage salad on your Roti bread, then avocado, cut tomatoes, shrimp, then a splash of tabasco.
Tips
- The spiced Roti flatbread adds a unique flavor to these burritos. You can substitute it with regular tortillas for a more Mexican style, but it won’t be the same.
