Aglio e Olio with Shrimp
Ingredients (2 portions)
- 250 grams spaghetti
- 1/3 cup of olive oil
- 8 cloves of garlic (thinly sliced)
- 1/4 tsp chili flakes
- 10 medium sized shrimps
- salt
- black pepper
- 50 g parmigiano reggiano (freshly grated)
- parsley
Procedure
- Boil the spaghetti in salt water, as per the intructions on the package.
- Heat olive oil in a wok and stir fry the shrimp at medium heat until it turns pink.
- Add the chopped garlic and chili flakes and fry them for a minute, make sure not to burn them. Season with a pinch of salt and pepper.
- Add the cooked pasta into in the wok, add a little bit of pasta water, then add the parmesan cheese and parsley. If the pasta is too dry, add some more pasta water.
- Add salt and black pepper if needed.
- Serve with a sprinkle of parmesan cheese and black pepper, drizzle with olive oil.
Tips
- The quality stands and falls with the olive oil. Don’t use a cheap one!
