Aglio e Olio with Shrimp

Ingredients (2 portions)

  • 250 grams spaghetti
  • 1/3 cup of olive oil
  • 8 cloves of garlic (thinly sliced)
  • 1/4 tsp chili flakes
  • 10 medium sized shrimps
  • salt
  • black pepper
  • 50 g parmigiano reggiano (freshly grated)
  • parsley

Procedure

  1. Boil the spaghetti in salt water, as per the intructions on the package.
  2. Heat olive oil in a wok and stir fry the shrimp at medium heat until it turns pink.
  3. Add the chopped garlic and chili flakes and fry them for a minute, make sure not to burn them. Season with a pinch of salt and pepper.
  4. Add the cooked pasta into in the wok, add a little bit of pasta water, then add the parmesan cheese and parsley. If the pasta is too dry, add some more pasta water.
  5. Add salt and black pepper if needed.
  6. Serve with a sprinkle of parmesan cheese and black pepper, drizzle with olive oil.

Tips

  • The quality stands and falls with the olive oil. Don’t use a cheap one!
